It’s hard to label a particular dish as “the” typical dish, as there are many. You will, however, find that whatever the main course is, it will surely be surrounded by fried plantains, “aros moro” (rice and beans), “Funchi” (a polenta-like dish), “Pan Batí”, Dumplings or Johnny Cakes. The Christmas Fruit Cake is a fruit cake with a difference. Fruits and nuts, ground and soaked in a wonderful blend of liqueurs, make this fruit cake really special. The wedding fruit cake, “Bolo Pretu”, is a great "occasion" cake, traditionally baked for weddings and holidays. This cake can be baked well in advance and "aged". In the Dutch Caribbean, a day or two before the wedding, one of the cakes are cut into squares, wrapped in waxed paper and placed in small decorated boxes for guests to take home. The wedding cake itself is baked in round pans, coated with sugar paste, decorated with butter cream, royal icing and tiny silver balls. The people of the Dutch Caribbean have a shared love of food and will seize every opportunity to entertain a guest. With over 100 recipes to choose from and full-color photographs this Dutch Caribbean cuisine makes your taste buds jump for joy and your imagination carry you to the islands.
So grab your apron, fire up the oven, and get ready to bake and cook!
